I'm working for another week and my colleagues have decided to have a going away lunch. I said pick whatever, but they were persistant...so, I picked a potluck. Not just any potluck, I decided we needed a theme and since the most important meal of the day is breakfast, our potluck will be a "Breakfast Theme." Now, I just need to come up with something that I will bring to make sure that I have something half way healthy as a choice. I know there will be plenty of grease and carbs as people have signed up to bring hash browns, sausage, bacon, blueberry pancakes, a breakfast casserole of eggs, sausage, cheese, etc, and orange juice.
What would you suggest for a healthy choice at a breakfast potluck?

Fresh fruit and cottage cheese, whole grain muffins,
baked apples,
low fat cheese slices with apple slices,
a slow cooker filled with hot oatmeal...
A big bowl of yogurt and a selection of toppers: fresh fruit and a low-fat granola. It looks pretty and people love it. Heck...even Martha Stewart does it for her breakfast buffets!
I like everyone's suggestions. You can't go wrong with fruit. Maybe a platter of healthy breakfast burritos and salsa?
I say enjoy your potluck....it's for you! You can always walk it off the next day ;)
My suggestion was definitely going to be a fresh fruit salad. Adding some low calorie yogurt and granola would also be great so people could make a "fruit sundae". Yum!
I was also going to say fruit salad. I used to do melon balls on long toothpicks for the kids when they would take snack to preschool. Like a fruit kabob.
I'd have to say a big fruit salad! Everyone loves fruit :)
how about the Apple Berry salsa recipe I sent? I can eat that for EVERY meal of the day.

I'd say high fiber bran muffins might be your best bet especially in an office setting. :)
Lots of good suggestions here. I'm also in favor of lots of fruit, and I like the idea of nice egg scramble using egg beaters/egg whites and loaded up with lots of veggies and chopped up Canadian bacon and maybe some low-fat cheese.

Never to late for potluck suggestions. The potluck is actually on Tuesday, so I'm still deciding. May have to bring a few things.
