Broccoli


30 calories in a cup of broccoli. I usually try to buy broccoli without much stem. Apparently, the stem has even more nutrients than the florets. Who knew? A great way to use the stem is to puree it and add it to other recipes. A little of the old: if it's pureed, nobody will know it's in there trick. I am fortunate to have three kids that absolutely LOVE broccoli. I am not a huge fan. I would rather eat peas myself.

Here's the low-down on Broccoli:
It is a true superfood as it is a great source of vitamin C and also contains beta-carotene, folic acid, iron, potassium and anti-cancer phytonutrients. I kinda treat the stems as a second vegetable since it is so different from the florets. I cut the tops off and steam them or add them to stir-frys. I peel the stems and slice them thinly to eat raw, stir-fried, added to soups, or in salads.

Brocolli is definitely up there as one of my favourites. I think I have it pretty much every day in one form or another.

My kids love their 'little trees' too. I usually buy mostly frozen broccoli since I get the most bang for my buck that way. And I don't have to clean it!

Who knew the broccoli was such a "Super Food". How about if I put cheese sauce over it? Every Super hero needs a sidekick right?

Broccoli is even better when you smother it with melted cheese!!

I like broccoli and used to eat it several times a week, cooked and raw....but I read that eating too much of it can interfere with thyroid function so I've cut back...recently I tried broccolini, which is a kind of baby broccoli---and it has skinny stems...I threw some into my veggie taco stirfy along with some corn, red peppers and onions and it tasted great, boosted the nutrition, and didn't have a strong flavor that regular broccoli sometimes has. I wouldn't have thought broccoli would be good in a taco but it was.

Yum yum broccoli! So delicious and healthy and beneficial!! I came across this site which has an article on how broccoli can decrease the risk of bladder cancer!
