A Sweet Recipe

Yesterday, was my farewell potluck and I did end up bringing fruit kabobs with FF yogurt flavored with FF/SF cheesecake pudding. They were a hit. I also brought a sweet salsa recipe. I was a little too lazy to make homemade chips, but it worked fine with tortilla chips too. Dang, it's so good...who needs the chips??

Apple Berry Salsa with Cinnamon Chips

This fruit salsa makes a great appetizer or can be served as a fun side dish with a Mexican meal.

Cinnamon chips
4 (7-inch) flour tortillas
1 tbsp sugar
1/2 teaspoon ground cinnamon

Salsa
2 med Granny Smith apples
1 cup strawberries -- sliced
1 kiwi fruit -- peeled and chopped
1 small orange
2 tbsp packed brown sugar
2 tbsp apple jelly

Preheat oven to 400 degrees. For cinnamon chips, lightly spray tortillas with water. Combine sugar and cinnamon in flour/sugar shaker; sprinkle over tortillas. Cut each tortilla into 8 wedges; place in single layer on round baking stone. Bake 8-10 minutes or until lightly browned and crisp. Remove to cooling rack; cool completely.

For salsa, peel, core, and slice apples. Cut apples into quarters; chop with food chopper. Slice strawberries and chop kiwi. Place fruit in 1 quart bowl. Zest orange and juice. Add orange zest, orange juice, brown sugar and apple jelly to fruit mixture, mix gently. Serve with cinnamon chips.

Nutrients per serving (3 tablespoons salsa): Calories 30, Total Fat 0g, Saturated Fat 0g, Cholesterol 0mg, Carbohydrate 8g, Protein 0g, Sodium 0mg, Fiber 1g.

Nutrients per serving (4 chips): Calories 40, Total Fat 1g, Saturated Fat 0g, Cholesterol 0mg, Carbohydrate 6g, Protein 1g, Sodium 130mg, Fiber less than 1g.

Today, was my last day at work. I did not have a good food day. I was definitely not expecting the surprise party that staff and residents had planned for me. Two cakes and a bunch of cookies and I hated to say no. I'll get back on track when the cookies are gone ;)

I'm actually looking forward to being at home, since I've been doing real well on the weekends and days I've been home. Seems there's a lot less temptation in my "controlled" environment. Work has been great, but I always seem to find something in the cafeteria, or vending machine, or there's always a baking group or Happy Hour that is just screaming "EAT ME!" It will certainly be interesting for a while to see how different it is to stay disciplined at home.

I had a great day and hate good-bye's but I really did not get sentimental at all. I know that I am resigning for the right reason and it has made the transition pretty easy, plus I've volunteered to continue music with the daycare twice a month, so I really won't be too out of touch.

Looking forward to a busy Thursday and Friday as the girls have off again and it will be Daddy and the 4 kids all day!

Congrats on your last day, Tom! Glad you enjoyed the salsa recipe. When TW gets her new stoneware in November, the chips can be another new recipe for your family to try. Enjoy your time with the kids!

I did a fruit salsa with chips at a party a few years ago and wasn't too happy with the salsa. Yours sounds better so I might give it another go. Thanks for the recipe.

I had to laugh when I read your comment on my blog yesterday about the temperature you keep your house because the whole time I was writing it, I was thinking to myself that Tom will think this is way too cold for a house with little kids! You fooled me sir! I guess you guys in the frozen north are gutsier than us Hoosiers!lol

I brought pita chips (made the same way as yours) and mango salsa to a party once and that was a big hit too. I'll have to remember the fruit kabob idea - I like that one.

how are your days with the kids going? no blog after yesterday, so tired?

i have been away from my nursing home for a year, and i still see my favorite coworkers (and even some residents!!) when i'm in town! so, playing at the day care should keep you in touch for sure.
